Whether you're passing through and need a meal, or just don't want to cook on a holiday, there historically haven't too many options. However, I just went to Ruby Tuesday and the door said they were open Easter Sunday, so this may be changing. One of your guide's successes has been with hotel restaurants, since they have hotel guests to feed. For example, last year your guide called Fort Rapids Hotel and Waterpark on I-70 and Hamilton Rd., and their restaurant was open on Christmas. Also, some people have claimed truck stops are open but I cannot confirm this.
